Hello SUMMER!
This season of life has brought A LOT of activity my way. I recently added Chef Instructor at Sur La Table to my resume. Woot woot!

Just so we’re clear, this new role is in addition to the plate-juggling (see what I did there?) that I do serving up nutrition group coaching, teaching culinary nutrition workshops, and facilitating a membership program to serve my community.

All of this to say, Mama has been busy! I am practicing what I preach, and am staying mindful of self-care, which includes alone time, naps, and sipping on refreshing drinks.
Here are three Delicious Summer mocktails that I have recently created. The family has given me their approval and delight. I hope you like them as well!
The Minty Stawberry Lime Delight was Oliver’s favorite!

Minty Strawberry Lime Delight
Ingredients
- 12 – 14 strawberries, stems removed
- 2 tbsp monk fruit granules
- 8 mint leaves
- 2 1/2 cups plain or berry-flavored sparkling water
- Juice from 1 lime
- Garnish: strawberries, mint leaves, and lime slices
Instructions
- Run strawberries through your juicer and mix monk fruit granules in your juice cup.
- Let sit for at least 2 minutes.
- In a pitcher, muddle the mint with 1 cup of the sparkling water.
- Once leaves turn a deeper green, add strawberry juice, remaining sparkling water and the lime juice.
- Stir until combined.
- Fill drinking glasses with ice and pour mixture on top.
- Garnish with strawberries, extra mint and lime slices.
- Serve immediately.
Notes
Mocktails are a great non-alcoholic way to enjoy a refreshment without the detriments of alcohol.

Frosty Orange Drink
Ingredients
- 1 cup filtered water
- 1 cup almond milk or oat milk
- 6 oz orange juice
- 1/4 cup monk fruit granules
- 1 teaspoon vanilla extract
- 8 to 10 ice cubes
Instructions
- Place all ingredients in a blender and blend until smooth.
- Pour into glasses, add metal straws, and sip away!

I went back for seconds of the Cucumber Mint Joy as it reminded me of a day at the spa!

Cucumber Mint Joy
Ingredients
- 1 cucumber
- 1 cup of filtered water
- 2 limes
- 8 – 10 mint leaves
- 2 tbsp maple syrup
- pinch of sea salt
- 1 cup plain sparkling water
- approx. 2 cups ice cubes
Instructions
- Peel and dice the cucumber, and add to a high-speed blender.
