Watermelon Strawberry Mint Popsicles!

This is the perfect summer snack! It is both mom and kiddo approved.

Ingredients

  • 5 – 6 cups watermelon chunks (seedless if your blender isn’t high-speed)
  • 1/2 cup applesauce
  • 10 strawberries (tops cut off)
  • 4 – 6 sprigs of mint (blend leaves only)
  • 2 tbsp Monkfruit Sweetener (or 10-15 drops of liquid stevia)
  • 1/2 cup filtered water

Instructions

  1. Place all ingredients in the blender.
  2. Blend until smooth. Taste to see if you want more fruit or sweetener.
  3. Pour into your popsicle molds.
  4. Freeze for a minimum of 2 hours.
  5. Slurp to your heart’s desire!

Notes

You may end up with extra mixture. Get creative! You could save it for tomorrow’s morning smoothie. You can add it to baked goods and sub out the requested liquid. You could pour it over ice and sip it for an afternoon treat. Yum!
