Kissed By An Angel Smoothie!

It may seem that I have been obsessed with smoothies this week.

I can’t help it. I get REALLY excited to find how many nutrients I can stuff into a blender and into my body. My Kissed by an Angel Smoothie meets my food requirements of protein, fiber, and healthy fats. It also satisfies my teenage daughter’s requirements for taste.

Angel has identified as Peanut Butter since the age of three.

My skin looks like chocolate and her father’s vanilla, so she placed herself in the peanut butter category when looking at her skin. This still tickles me because when it comes to dessert, out of all of the flavors, I don’t know anyone who loves chocolate more than her.

Our kitchen has become a lab over the past few months.

Some of my experiments have bombed, and the children quickly let me know their displeasure. A lot of my successes have been aimed more at the adult palette. So, it was a pleasant surprise when my favorite chocolate lover gave me two thumbs up on this one.

This Kissed by an Angel Smoothie is chock-full of potassium, protein, Vitamin C, and chlorophyll. It can be made for breakfast or a snack when looking for an energy boost. Enjoy!

This smoothie meets my requirements for protein, fiber and healthy fats. It meets my daughter’s requirements for chocolatey sweetness.

  • 1 cup alternative milk, almond milk is my fave
  • 1/2 cup filtered water
  • 1 pitted date
  • 1 handful spinach, Swiss chard, or kale
  • 1 tbsp unsalted pumpkin seeds
  • 1 tbsp coconut oil or coconut butter
  • 1 scoop chocolate protein powder (at least 10g protein)
  • 1 scoop collagen (at least 10g protein)
  • 1 tsp Maca powder
  • 1/2 tsp cinnamon
  • 1/2 banana or 1/2 avocado
  • 1/4 cup ice

Instructions

  1. Place all ingredients in the blender and blend at high speed for about 10 seconds or more.
  2. Pour into your favorite glass and enjoy!

Notes

Bonus Tip: This dish keeps well in the fridge for 2 – 3 days. It creates excellent leftovers for lunch, so feel free to make a little extra!

*The kale salad was inspired by one of my teachers, Meghan Telpner. She has a similar recipe in her UnDiet Cookbook. You may find more of her culinary delights on her website.
