Like to the point that it doesn’t always make sense.  

 

My parents grew up in El Paso, Texas, so there have been a lot of road trips from Denver over the years.  On the most recent trip I noticed that in a really small town along the way, where there were NO other cars in sight, I put the car blinkers on to signal that I was turning left.  

 

Did I mention there were no other cars in sight?  

 

I can’t help it.  

 

Part of this behavior comes from habit, but I think a deeper part is to calm my nervous system.  Life feels a bit safer when I understand the rules.  

 

So imagine my excitement when I learned how to make the most amazing easty-to-peel hard boiled eggs in an Instant Pot.  It comes with rules!

Easy-To-Peel Instant Pot Hard Boiled Eggs

These Easy-To-Peel Hard Boiled Eggs are an amazing source of protein and an easy to grab snack.

Ingredients

  • 1 cup cold water
  • 6 – 8 eggs

Instructions

  1. Place 1 cup of cold water in the inner pot of your Instant Pot.
  2. Load your wire trivet/rack.
  3. Set 6 – 8 eggs on the rack.
  4. Place lid on the pressure cooker and set for cook time 8 minutes on high pressure.
  5. Once cook time has elapsed, let the pressure release for 8 minutes.
  6. Quick release and carefully remove eggs from Instant Pot and place in a glass bowl of ice water.
  7. Let eggs sit in the ice water bath for a minimum of 5 minutes.
  8. Remove eggs from the bowl and store in the fridge for up to 7 days unpeeled or peel and use within 3 days.
  9. Enjoy these easy-to-peel eggs for lunch, snacks or any time you are craving a dose of protein.

Notes

Feel free to vary the cooking time to get a yolk consistency to your liking.

Choosing eggs from pastured chickens is not only more humane, but this article from the Cambridge University Press explains that pastured eggs are richer in vitamins A and E, as well as in omega-3 fatty acids.  This is great news for our brain health!
