First prep the Cauli Rice.
Use the pulse feature on your food processor or blender. If you have neither, take your time and chop the cauliflower into tiny pieces with a knife. Cook it before the chicken or while the meat is simmering.
You may use “regular” rice for this meal, but the cauliflower is super low on the glycemic index and will not affect your blood sugar the way grains do. If pulsed/chopped just right, the texture of your Cauli Rice will still taste like the other stuff, so you will not feel like you are missing out. Big bonus? Cauliflower is LOADED with Vitamin C. It is the perfect food to help build and support your immune system.

Cauli Rice
Ingredients
- 2 tbsp ghee, avocado oil, or coconut oil
- 1 head cauliflower
- 1 tsp sea salt
- pepper to taste
Instructions
- Wash and coarsely chop cauliflower. Pulse in a food processor or blender until you get a riced consistency. In lieu of a food processor, please finely chop cauliflower by hand.
- Heat oil on medium-high heat.
- Sauté riced cauliflower, adding sea salt and pepper at any time, for about 5 minutes. Taste for texture, cooking longer if you prefer a softer rice.
Notes
Feel free to add more spices and even nuts and seeds to your cauli rice. This side dish can be enjoyed as a full meal with the right flavor and ingredients (I’m looking at you turmeric, garlic powder, chili powder, and pumpkin seeds).

With this dish, I do not love that the hoisin sauce contains sugar. It is a small amount, however, in comparison to the rest of the meal. The hoisin sauce gives the cubed chicken such a magical flavor that consuming a little bit of sugar is worth it!
In this part of the meal, we are consuming more Vitamin C from the orange zest and the orange juice. The sesame seeds contain sesamin which is high in anti-oxidants and great to support healthy levels of cholesterol in our bodies. Lastly, arrowroot flour is an awesome ingredient to make the chicken crispy without adding any inflammatory properties.

Crispy Gluten Free Orange Sesame Chicken
Ingredients
- 3 chicken breasts cut into cubes
- 1/4 cup arrowroot flour
- 2 tbsp coconut oil
- 1 cup gluten-free hoisin sauce
- 2 tbsp orange zest
- juice from one medium orange
- 1/4 cup apple cider vinegar
- 1 tbsp coconut sugar (or alternative sweetener)
- 1 tbsp sesame oil
- sesame seeds for topping
- scallions, chives and/or other herbs for topping
Instructions
- Grab a gallon-sized Ziploc bag and put the chicken and arrowroot flour in. Seal tightly and shake until all surfaces of the cubes are covered. Let it rest.
- Mix hoisin sauce through sesame oil in a separate bowl and put aside.
- Heat the coconut oil on medium-high heat and brown the chicken for 5 minutes on both sides.
- Once the chicken is golden brown, add the sauce and stir until the chicken is completely coated. Let it simmer for about 5 minutes.
- Spoon over the cauli rice, top with sesame seeds and herbs.
Notes
If you end up having leftovers, reheat them in a toaster oven or on a stovetop to keep the chicken crispy!
