My latest obsession: the Lemon Lucy Sunshine Smoothie! This one has just the right amount of sweetness and tartness, just like my muse.
This smoothie is named after my bonus daughter. I have been in love with her father for about six years. She and I first met when I visited my daughter’s first-grade class to read a story. Little did we know that we would be intimately connected in the next few years.
Out of the 25 children in the classroom, Lucy was the only one who had the confidence to approach me to ask if she could sit in my lap – sweet! When I explained to her that it would not be fair to the rest of the class, she promptly sat next to my leg and would not budge – tart.
And so it is with this smoothie – sweet and tart like one of my most cherished people in the world. This happens to be one of her favorite treats from me. I hope you enjoy it too!

Lemon Lucy Sunshine Smoothie!
Ingredients
- 1/2 lemon juiced
- 1 cup filtered water
- 1/2 cup full fat coconut milk
- 1/2 avocado
- 1 tbsp vanilla extract
- 1 scoop vanilla protein powder at least 10g protein
- 1 scoop collagen at least 10g protein
- 1 handful spinach
- 4 drops liquid stevia
- 1/2 cup ice
Instructions
- Juice the lemon and add to the blender with remaining ingredients.
- Blend to desired consistency and ENJOY!
