I think of tacos.
I especially think of my Tacos El Colorado with Cilantro Lime Vinaigrette.
Both of my parents were born and raised in El Paso, TX, which is very close to the border of Mexico. Naturally, Mom’s food (Dad did not cook) was influenced by Mexican culture. I feel lucky to have tasted the most delicious tacos throughout my life, made by family members and Mexican friends alike.
With that, I introduce you to the healthiest and most flavorful version I have tasted yet – my Tacos El Colorado with Cilantro Lime Vinaigrette, created right here in colorful Colorado. These tacos are packed with protein, fiber, and healthy fats – all of the necessary pieces of a balanced meal.
You will want to make the deliciously creamy vinaigrette first! The longer you give the ingredients to marinate, the tastier your dressing will be.

Cilantro Lime Vinaigrette
Ingredients
- 1 ripe avocado
- 2 tbsp apple cider vinegar
- 1 lime, juiced
- 1/4 cup cilantro
- 3 garlic cloves
- 3/4 cup olive oil
- sea salt and pepper to taste
- Blender or Food Processor
Instructions
- Place everything in a high-speed blender or food processor. Blend until smooth. You may need to scrape the sides as you go.
- Pour into a glass jar. Refrigerate for use throughout the week.
- Enjoy!
Notes
The longer you give the ingredients to marinate, the tastier your dressing will be.

Next, we make the tacos! I named them El Colorado because of the various colors you get from the Vitamin C-rich red, orange, and/or yellow peppers, the brain-supportive green avocado, and the detoxifying green cilantro. The name is also a nod to the beautiful place I call home.
You may not love cilantro, so feel free to substitute another herb (parsley would be delish) or chopped spinach. The green additions will strengthen your immune system and support your heart health.

Tacos El Colorado
Ingredients
- 1 pkg taco shells or Romaine lettuce leaves (Siete brand is grain-free)
- 1 tbsp coconut oil or avocado oil
- 1 lb ground turkey, beef, or lamb
- 1 medium yellow onion, chopped
- 1 red, orange or yellow bell pepper, chopped
- 2 heaping tsp chili powder
- 1 tsp sea salt
- 1 tsp ground cumin
- 1 tsp garlic powder
- 10 Brussels sprouts
- 1 avocado, diced
- 1 tomato, diced
- 1 handful cilantro
Instructions
- Heat oil at medium-high heat and sauté ground meat, onion, and pepper. Add chili powder through garlic powder and stir until meat Is browned.
- Prepare toppings while the meat mixture is cooking. Cut the woody ends from Brussels sprouts and grate in a food processor. Dice avocado and tomato. Chop cilantro.
- Place mixture in taco shells or lettuce leaves and top with your delicious veggies!
Notes
For crispier tacos, heat your shells in the oven at 350 for 2 – 3 minutes.
Another note: pouring the lusciously creamy Cilantro Lime Vinaigrette
on top makes these tacos even more delicious!
