It is a very fun challenge to find wonderful recipes and then make them gluten free, sugar free and/or dairy free if necessary. Here is one of my latest finds:
Healthy living has always been a goal of mine, but now that I’m getting older, I feel some of my poor food choices a lot faster. Having children also helps to motivate me to eat healthy in order to keep my energy up. This Rainbow Thai Chicken Salad recipe came from Gimme Some Oven. It is full of flavor and the kiddos love it, but I took it as a personal goal to make it just a little bit healthier.
With so many food sensitivities, I’ve had to make a conscious choice to look at all of the many foods I CAN eat versus those that I can’t. The children make it a bigger adventure as they are quick to let me know what works and what does not.
We love bringing real, healthy food to work the next day.
